My favorite mealtime hack is the mouli (one of those fancy cheese grinders they use for parm at Italian restaurants)! It’s our most-used appliance - and it makes such a difference to have freshly grated cheese. Plus, a block of cheese stays good longer than pre-grated cheese!
Another favorite hack is freezing cookie dough in balls and baking them in the toaster oven whenever a cookie craving hits!!
My go-to easy meal is packaged tortellini/ravioli with store-bought pesto and a bagged Caesar salad. If I’m feeling a little fancier, I make Alison Roman’s creamsicle salad instead—arugula, oranges, burrata, sliced shallots in lemon juice, olive oil, salt and pepper!
Pesto is such a helpful thing to have on hand! And that creamsicle salad sounds incredible - I have 2 of Alison Roman's cookbooks but have never made that one!
Breakfast for dinner, always! Whether it's scrambled eggs and toast or we go all out with french toast and home fries, it's always easy and always a hit!
I love baked potatoes too - so quick and so satisfying, with some tuna or salmon from a tin, lots of grated cheese and a dollop of sour cream. If you want to get fancy, add some cooked corn kernels or some chopped spring onions. I'm really looking forward to getting some more great ideas from Emily's cook book.
The thing I miss most about Ireland - live in Aus for 17 years - is jacket potatoes and fillings being everywhere! It’s the best dinner and endless topping opportunities! Adding to my list this week! x
Favorite easy meal: kielbasa cooked in the oven for 25 min with crispy pierogies with a dollop of sour cream, some fresh sauerkraut, and a quick simple salad.
Baked salmon is quick, simple and so easy my 11 year old usually makes it (it's his favorite). He adds salt, pepper, brown sugar and a little olive oil and bakes at 400 for about 13-15 min depending on how thick. We usually have it with rice and a green vegetable of some sort. I recently had my mind blown when I realized my rice cooker has a delay function, meaning I could set it to start up to 12 hours later so the rice is ready when we get home. NEVER knew this 🤦♀️
I am jealous that 1. Your son eats fish and 2. He makes it himself! I love salmon but my kids don't! Thanks for the rice cooker intel - I will check mine to see if it can be set ahead - that is life changing!
Favorite easy meal: bone-in chicken thighs baked for 35 minutes at 400 degrees, use whatever spices you like (I use garlic powder, coriander, pepper, salt, basil, thyme & oregano), no oil necessary. Jasmine rice + steamed broccoli. Super easy & delicious! 😋

Easy toddler meal hack:
Annie’s Mac and cheese from a box, but add frozen peas during the last minute of cooking (veggie!), and a scoop of greek yogurt after draining (protein!), and you have a nutritionally balanced, less than 10 minute meal!
We love to make egg bagels with fruits and hash browns. I know my family will love it.

Mine too! And I love using our waffle/pancake maker instead of doing them on a skillet. No clean up! 🎉

Yum! Skin on chicken thighs are my go-to as well. I like to do them in the cast iron skillet for 25 mins - nice and crispy!
